Candied Sweet Potatoes

These are the sweet potatoes my mother used to make on holidays when my brother and I were little kids, before she became diabetic. They are sweet, succulent, delicious and as it turns out not that good for you but hey? If you're healthy enough to enjoy treats, once a year can't hurt, right?

Candied Sweet Potatoes

Cover potatoes with water, bring to a boil.

Lower heat and simmer for 25 minutes, until done.

When cooled, peel and cut into chunks.

Place in 2-qt baking dish.

In small saucepan combine remaining ingredients, cook and stir until mixture boils.

Pour over potatoes.

Bake at 350°F for 40 minutes.
